Pinterest: Eggplant Parmesan Hoagies

One of my favorite things to do is surf Pinterest for dinner ideas. I credit Pinterest for making me a better cook. Maybe not a better cook, but a better dinner maker.

A while back I started a Facebook page called Pinsters as a place where we can all share our Pinterest experiences and what we really think of certain recipes, crafts, DIY projects, etc. What I plan to do is incorporate my Pinterest reviews on this blog. Lucky you!

Eggplant Parmesan Heros

I mentioned Market on the Move (MOM) last night with the pickle project. (The pickles turned out better than store bought pickles. Just sayin'.) We not only received a ton of cucumbers, but we also got boxes of zucchini and about six eggplant.

Let me just say that I've tried to make eggplant a regular in our house and I have failed. I live with carnivores. A meatless entree is a pointless entree to these guys.

But I ignored their carnivorous opinions and I dove right in. I'm going to be honest, I didn't really follow the recipe. I have a sauce I stick with and I have a simple recipe for Eggplant Parmesan, so I basically looked at the picture, made Eggplant Parmesan, topped it with my sauce and provolone slices on a butter and toasted hoagie roll, and voila! We have Eggplant Parmesan Hoagies.

I'm just going to go ahead and say it. I deserved a pat on the back for this. Why? Because one of the carnivores said it was actually really good, despite the lack of meat. But, seriously. It was really good.

My sauce:

3 cans (14.4 ounces) crushed tomatoes
3 cloves garlic, finely chopped
2 Tbsp. Italian seasoning
1/2 tsp. salt
1/2 tsp. red pepper flakes
1/4 tsp. freshly ground black pepper

If eggplant ever shows its face in this house again, it will be on a hoagie roll, smothered in my sauce and provolone cheese. Mmmkay?
